Fun Halloween Cake Pops




We are going to a Halloween Party and Trick or Treat on Wednesday.  I  decided to make some fun cake pops to take.  I wanted to make a cake that was festive so I decided to make a pumpkin spice cake.  It tastes great but I realized that the cake was way too moist to try and form into cake pops.  I made do though and ended up having to freeze them to get them to stay in shape while I dipped them in chocolate.  Thankfully the designs I decided to make look ok kind of rough and lumpy.

I had left over red icing.  So I added yellow to make it orange.
I thought it would go well with the pumpkin cake.
 
 
I shaped them into balls and rectangles
 

 
Some of the balls I made into witches cauldrons.
I used nerds for the bubbling brew!!
 


For the spiders I covered them in black sugar and then used
black shoe string licorice and candy eyes. I had to split the
bag half way up to get the bag on without losing legs. I still
had a few tragedies but not many!!
 

 
For the mummies I added candy eyes and then drizzled on more
white chocolate
 
 
The werewolves have candy eyes nose and teeth. 
 
 
I was a little frustrated with these cake pops.  I will have to make sure next time to use a cake that is not so moist.
They did not turn out how I wanted them but they still ended up cute.

Apple Butter

This was my first attempt at apple butter and I was very pleased with the results and the simplicity of the recipe.  I made my apple butter in my crock pot.  It is so easy that way.  All you do is load it up and stir once in a while.

First I loaded my crock pot completely full of peeled and sliced apples.  I had a variety of apples in it.


Next add your sugar and spices.  I used 2 cups of sugar, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of salt.  You can change the amount of sugar and spices to suit your own taste.


I turned my slow cooker on high to give it a kick start and cooked it for 1 hour.  I stirred once after half an hour.


After an hour turn down the slow cooker to low.  Let cook until the apples have cooked down and thickened.  I let mine go for 12 hours.  It was pretty much ready after 10 but I could not get to it to can right away.  Stir down your apples occasionally.

to cook down.  


Once the apples break down quite a bit you can use a whisk to stir
the apples.  It helps continue breaking them down and makes the
apple butter smooth.
 
The apple butter is done and ready to can.  It is nice and thick.
My house smells wonderful!!
Put the apple butter into clean sterilized jars.  Leave 1/4 inch head space.  Wipe rims and adjust caps.  Process in a boiling water bath for 5 minutes.  I ended up with 8 1/2 half pint jars.  I had a little more than that but found out my hubby was eating some of it when I was not home. He said it was really good!!  I will keep a few jars and give some away as Christmas gifts!!

Canned Apple Pie Filling

I thought I was done canning for the year.  The garden was pretty much finished and normally freeze pumpkin and squash.  A friend let me come over and pick apples out of their orchard.  So I decided to put up some apple pie filling. 

I did not have time to take pictures of each step like I normally do.  The steps are the same as for the raspberry pie filling.  See my post on Raspberry Pie Filling to see step by step pictures.

The recipe is slightly different though for the apple pie filling though. 

To make 7 quart jars

6 quarts of blanched peeled and sliced apples
5 1/2 cups sugar
1 1/2 cups Clear Jel
1 Tablespoon of Cinnamon
1 teaspoon of Nutmeg
2 1/2 cups Cold Water
5 Cups Apple Juice
3/4 Cup Bottled Lemon Juice

Mix sugar, clear jel, cinnamon, nutmeg, water, and apple juice in a large kettle.  On medium high heat bring to a boil stirring frequently.  Cook until thick and bubbly.  Add lemon juice and stir constantly for 1 minute.  Remove from heat and fold in apples.  Put into clean and sterilized jars.  Leave 1 inch head space. Process in a boiling water bath; pints and quarts are both 25 minutes. 

To blanch apples bring a large pot of water to a boil.  Put in 6 cups of apples at a time.  Bring back to boil and boil for 1 minute.  Remove and drain.

Halloween Cookies

I had someone order 4 dozen Halloween cookies from me last night.  They needed them today so I made up a batch.

I have made these cookies before but I normally make both the bats and cats black.  I wanted them to be a little more colorful so I decided to make the bats purple.  I really like them that way. The ghosts, bats, and cats are adorned with candy eyes and a mouth to match them.   The cookies are very festive.  They will look great on a plate.

Fall Sugar Cookies

I made some fall themed sugar cookies to send with my husband on a hunting trip.  They turned out very pretty.  I just bought these new cookie cutters.  I had so much fun decorating the acorns, maple, and elm leaves!!

Halloween Cake Pops

I helped a friend make some cake pops last night.  This is only the third time I made cake pops.  The first time I made them using that cake pop maker.  This time I made them the traditional way.  This is making cake, crumbling it up, adding icing, then forming it into shapes.  I have to tell you this was rather fun and I will be making them this way from now on. 

We made chocolate cake balls.  Then dipped it in orange melting chocolate.  It needed to be dipped twice to fully cover the cake pops.  We decided to put the sticks in the top.  She wants to display them on a plate. 

We made up some royal icing and piped on leaves and vines.


We then put them in clear bags and tied some ribbon in a bow.  They look so festive and will look so pretty displayed on a plate.

 
For the ghosts we shaped the same size ball of yellow cake into a peanut.  Then they were put on a cookie sheet to flatten the bottom slightly.  Dipped in white chocolate and then a face piped on with royal icing.  The are so cute!!


These were bagged in a spider web bag and in a pumpkin bag.  Tied up with a bow they really spruce up the white ghost cake pops!!




Now I am going to have to make some for myself so I can taste them.  She needed these for a show she is doing.  So I just got to have the fun of helping make and decorate!!

Lots of Cupcakes!!

I had someone order 240 cupcakes from me.  The baker they had lined up had a family emergency and they needed them at a day and a half notice.  I agreed to it and spent most of the day baking and decorating cupcakes. 

It was for an anniversary for a local restored Carousel.  So I decided to do silver cup cake liners and pastel colors.  I topped them with some gourmet sugar to give them a little sparkle. 

I put my leaf in my table to fit most of them on.
 


They didn't all fit so I had to overflow onto my counter
 


I had that edible sugar everywhere.  I am glad my
husband wasn't home.  It was all over the table, the counter,
and the floor.  I did get it cleaned up before my hubby got home!!
 



Sky blue, mint green, lemon yellow, rose pink, and violet.
These are the colors that I think of when I think of those old
carousel horses going up and down on the silver poles!!
